One thing our family looks forward to every March is the basketball! We love the beef tacquitos and the beef and cheese tacos and we really love them when they are dipped in a yummy dip. Instead of using a traditional dip, like salsa, I decided to whip up this really easy creamy avocado dip! You guys are going to love it. I may have eaten the entire thing in one sitting – whoops!
Not only is it pretty good for you, but the flavor is amazing. Pairs perfect with any mexican-style dish, like these taquitos and tacos. Even with making this yummy dip, you will not be in the kitchen for very long! Which is a win-win for everyone.
If you wanted, you could even make the dip ahead-of-time; wrap it and store it in the refrigerator. With having raw onions as one of the ingredients, it helps to keep the avocados from burning. No one likes a strange color dip.
- ⅛ cup diced onions
- 1 large avocado, diced
- ¼ cup fresh cilantro
- ½ lime juice
- ¼ teaspoon cumin
- ¼ cup greek yogurt
- salt and pepper, to taste
- Add the onions, avocado, cilantro, lime juice, cumin, and greek yogurt to a food processor. Pulse until creamy.
- Taste and add salt and pepper.
