Mouthwatering butterfinger blondie recipe that is so good and packed with chopped up butterfingers! Absolutely delicious served warm with a scoop of ice cream!
I should have known that we were not going to see many trick-or-treaters this year in our neighborhood. Last year we did not see many and we were really prepared for Halloween.
We carved pumpkins, scary and funny ones, and stocked up on a lot of candy - a little bit of everything. We had ONE trick-or-treater come by, and he wasn’t a child. He was a neighbor way down the street from us.
So this year, we didn't buy hardly any candy, besides a few things we personally enjoy. Like butterfingers and reese’s cups - my two favorites. Now the hubs loves hard candy, like jaw breakers and airheads.
Did you have a lot of trick-or-treaters this year? Please share - I love to hear your stories. 🙂
So the moral of the story, we still bought too much candy, so I decided to make blondies and stuff chopped up butterfingers in them! They were a huge hit. Our freeze still has a few left, and some ice cream in there too.
Enjoying a blondie room temperature is great, but warming it up in the microwave for about 45 seconds, and then topping it with a scoop of vanilla ice cream is perfect. Oh...so..perfect. You’ll love it.
If you are a fan of blondies, I think you will also love my peanut butter blondies or even my I just got dumped brownies - those are insane!
- 1 cup unsalted butter softened to room temperature
- 1 and ½ cups light brown sugar lightly packed
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 24 about 3 cups chopped fun-sized butterfingers, chopped
-
Preheat oven to 350 degrees, line a 9x13 baking dish with aluminum foil or parchment paper. Set aside.
-
In a large mixing bowl, beat the butter and brown sugar together on low-speed with a paddle attachment. Using a plastic spatula, mix in the eggs, then the flour, baking powder, salt, and 2 cups of the chopped butterfingers. Make sure not to over-mix.
-
Spread the batter into the baking dish, sprinkle the rest of the chopped up butterfingers on top and press lightly into the batter.
-
Bake for 20-22 minutes. You want to slightly under bake them. When they are finished baking, they will be giggly, that is normal. They will finish baking in the baking.

I agree. Warm blondies with ice cream are the best!! Our Halloween got rained out. Huge thunderstorm with hail. Fingers crossed we have more trick-or-treaters next year!
