Tater Tot Sloppy Joe Casserole - A family favorite made into a casserole everyone will enjoy, even the pickiest eaters!
In our family, we are huge fans of casseroles, especially ones loaded with fresh vegetables. Yum. Not only are they always delicious, but they can feed an army. Looking for a dish that doesn't serve as many people, do not worry, we will have you covered.
A lot of the time, we like to store the extra in the freezer for when we need a quick dinner. Read below for more details.
What do you typically add to your casseroles? The possibilities are endless. Sloppy joes are always a family favorite and are fantastic as a casserole. Even the pickiest eater will be enjoying it, or perhaps even have seconds. It's even perfect for a veggie hating hubby. Just in case if you have one in your family.
You can easily scale down this casserole, it does serve a lot as written in the recipe. You will want to cut everything in half; besides the carrots, green bell pepper, and a poblano - if you are using one. Serve in an 8x8 baking dish instead of a 9x13 and bake at the same temperature and time as written in the recipe.
For the main ingredients in this tater tot sloppy joe casserole, we used MANWICH and Hunt's diced tomatoes. Both are easy to find, typically in the canned section of your grocery store. Both items make dinner a breeze and perfect for a weeknight meal!
Tater Tot Sloppy Joe Casserole – A family favorite made into a casserole everyone will enjoy, even the pickiest eaters!
- 2 pounds 80/20 ground beef cooked and drained
- 2 carrots diced into small quarters
- 1 green bell pepper diced
- 1 poblano pepper diced
- 1 large white onion diced
- 12 ounces frozen corn
- 3 garlic cloves minced
- salt and pepper
- 14.5 ounce can Hunt's Diced Tomatoes
- 2 15 ounce cans MANWICH original
- 1 cup cheddar cheese shredded
- ½ cup mozzarella cheese shredded
- 2 pounds frozen tater tots

Preheat oven to 425 degrees.

Mix together the cooked ground beef, carrots, bell pepper, poblano pepper, onion, corn, garlic, salt and pepper, diced tomatoes, and MANWICH in the same pan you cooked the beef in.

Pour the mixture into a 9x13 baking dish.

Sprinkle ½ cup cheddar cheese on top. Top with tater tots. Sprinkle 1 cup cheddar and mozarella cheese on top.

Bake for 20-25 minutes or until the tater tots are cooked.
Freezer Directions: Prepare the casserole into a freezer casserole dish. Cover and store in the freezer for up to 3 months. Bake at 425 degrees until the tater tots and filling are warm, approximately 25-30 minutes.
