Did you know that May is National Salad and National Vinegar Day? This time of year I always love because all of the flowers and greenery is really starting to come out. Right about this time of year, lettuce is really growing as well. I think May is the perfect month of National Salad and Vinegar Day! Don't you think?
What's not to love about a great salad? Since salads are always light, I knew I wanted to create a delicious and light vinaigrette.
When I first got to thinking about a vinaigrette, strawberries popped out at me. I knew I wanted to include them because everyone loves strawberries. They are a perfect fit. Yum.
This really is a truly easy recipe - you will only need Pompeian Balsamic Vinegar , fresh strawberries, water, olive oil, honey, and a pinch of salt.
I first started by simmering the strawberries with the water and honey until the juices and flavors started to come from the strawberries. I allowed that to cool for a couple of minutes, and added the strawberries into the food processor with the rest of the ingredients.
Not hard at all!
- 1 pound of fresh strawberries chopped
- 2 teaspoons water
- ½ tablespoon honey
- pinch of salt
- 3 tablespoons olive oil
- 1 tablespoon Pompeian Balsamic Vinegar

In a small skillet,, add in the chopped up strawberries, water, honey, and salt. Let it simmer until the strawberries have release their juices and flavors. About 5-10 minutes. Allow to cool.

Combine the strawberries, olive oil, and balsamic vinegar in a food processor and pulse until it is creamy.
