    After the holidays, for some, it can be hard to get back into the routine of preparing healthy and delicious meals. Before the major holidays start, I always say I am going to try to eat healthier in the New Year and sometimes it's a challenge. Especially when preparing your little one's lunches.

    We do not have any children, but I always pack my husband's lunch for the next day. Sometimes it's leftovers and other times it can be a quick sandwich or these incredible ham and veggie pinwheels. These ham and veggie pinwheels are so easy. And the best part, I made them bite-sized. The best part, they are made with natural lunch meat and filled with fresh vegetables: shredded carrots and sliced green peppers.

    I love how creative you can be with these pinwheels! Fill them with your favorite vegetables or lunch meat. Not a fan of green pepper, saute them or add another one! Fresh broccoli or cauliflower would be delicious, maybe a little harder to slice, though.

    These pinwheels are great to make ahead the night before. You can add all of the filling ingredients, roll the tortilla up and cover it in the refrigerator overnight, or slice them an hour later. The pinwheels need at least one hour of chilling time to be able to slice them easier Like tomatoes? Add a sweet cherry tomato on top and then place the toothpick into the pinwheel. See how easy these little guys are?

    Ham and Veggie Pinwheels – Layered with black forest ham, shredded carrots, sliced green peppers, and topped with romaine lettuce. Perfect as appetizers for a party or a delicious and healthy lunch!

    Ingredients
    • 5 fajita tortillas
    • 4 oz cream cheese, softened at room temperature
    • ¼ cup plain greek yogurt
    • 10 slices of black forest ham
    • ¾ cup shredded carrots
    • 1 finely sliced green bell pepper
    • ½ cup shredded cheddar cheese
    • 5 small romaine lettuce leaves, washed and dried
    • cherry tomatoes, optional
    Instructions
    1. Place the tortillas on a flat surface. Set aside.

    2. Cream together the softened cream cheese and greek yogurt.

    3. Place the cheese cream and greek yogurt mixture on the tortillas.

    4. Place 2 slices of ham, shredded carrots, sliced green bell peppers, shredded cheddar cheese, and a romaine lettuce leaf on top and tightly roll. Place onto a sheet, one you can place into the refrigerator. Repeat with all tortillas.

    5. Cover the rolled tortillas and place into the refrigerator for 1 hour.

    6. Slice each rolled tortilla into 8 pinwheels and place a cherry tomato on top and then insert the toothpick through the tomato and into the pinwheel. Repeat with all rolled tortillas.
