As I was thinking about what to call this recipe that describes it correctly, I realized the only and most accurate title of this recipe had to be the main focus ingredients. Now I think we should all say this recipe title 5 times in a row. It's a tongue twister for me! So as the title says, this recipe is all about the lemon butter green beans with toasted almonds bacon & feta.
I can't believe I am even saying this because it doesn't feel like November here at all, but the biggest foodie holiday of the year is quickly approaching. Have you thought about what types of dishes you would like to serve on Thanksgiving? Who am I kidding? You just got through Halloween; of course, you need a little extra time to think about those things. I mean it's a few weeks away. I haven't even thought about it, but most likely we will be going to my parent's or my in-law's for Thanksgiving. Not a shocker one bit because we do that every year!
Even though we aren't hosting Thanksgiving, or ever will soon, I always like to prepare and bring dishes to help out. I am seriously thinking about bringing these lemon butter green beans with toasted almonds bacon & feta. I have to admit; I wanted to say that say that again!
So what's makes these green beans stand out? Well, first of all, they are fresh green beans and not the canned green beans. Let's start again, I have nothing against canned green beans, but they get mushy, and they aren't my style at all. I would rather purchase fresh or frozen green beans. The second part is the BUTTER that creates the silkiest lemon butter sauce. It's so good I may have to drown all of my vegetables in this sauce.
Since I am saying the butter is one of the most critical components in these green beans, let's chat a few minutes about why it is. I highly suggest using a premium butter and not the one you picked up at the grocery last week that was on sale. Our new favorite premium better is Finlandia. Finlandia is made with the purest milk from Finnish family-owned farms, doesn't contain artificial ingredients and no added hormones (woohoo!). Did you know Finland is one of the greenest countries in the world? With that being said, Finlandia butter is a productI can feel good about serving to my family.
Another huge flavor component in this side dish is the toasted almonds. You don't have to toast your almonds, but I highly recommend it. Another element that makes these green beans stand out is the feta. I thought there was already a lot going on in these green beans, but you cannot forget the FETA.

Lemon Butter Green Beans with Toasted Almonds Bacon & Feta - Fresh green beans coated in the most outrageous lemon butter sauce! They are salty, tangy, crunchy, and crispy! AKA the best green beans ever!
- 1 tbsp oil
- ¼ cup sliced almonds
- pinch of salt
- 16 oz fresh green beans, rinsed and stems removed
- 2 tbsp unsalted butter
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 3 pieces of bacon, cooked and crumbled
- salt and pepper, to taste
- feta cheese, to taste

Place the oil and sliced almonds in a saute pan over medium heat and stirring to toast the almonds for 3-4 minutes. You will know when the almonds are toasted when they are a beautiful light brown color.

Season with a pinch of salt.

Fill a saute or a frying pan with water to bring to a boil.

Add the green beans, cover, and cook until green beans are tender, about 3-4 minutes.

Meanwhile, melt the butter and lemon zest in another saute or frying pan over medium heat.

Once the green beans are tender, drain and add them to the same frying pan as the melted butter and lemon zest.

Add the lemon juice and bacon and toss to combine.

Taste and season with salt and pepper, add the toasted almonds and stir to combine.

Garnish with crumbled feta cheese.
