A delicious dark chocolate muffin recipe that is perfect for those hectic and busy morning! Paired perfectly with McCafé Coffee Pods.
Ever since a little girl, I have never been a true morning person. I love staying up late at night because I am more productive during those hours. I dread the mornings, each and every single day.
I am sure you dread the mornings to if you are a busy parent. Not only do you have to get yourself ready, but you have little ones to get ready, as well. It has be a very hectic time, even for us it is. What if I told you your mornings could be a lot less hectic and you can start to enjoy the mornings?
There are two things I look forward to the mornings and they are always a delicious quick pick-me-up option - coffee and a quick breakfast. Not everyone has the time to make a big breakfast before heading out the door, I know I do not.
Once my feet land on the floor from getting out of the bed, I briskly walk to the kitchen and make a cup of coffee with McCafé coffee pods. When my coffee is brewing in my brewer, I use this minute to allow myself to wake up. After the first cup of coffee, I usually drink it fairly quickly, I am then able to get everyone else ready.
I usually always have breakfast ready the night before, most of the time it is something I can take with me - muffins. They are the perfect breakfast option to take with you even with a cup of McCafé coffee.
The other idea was the first time trying the McCafé coffee pods, I attended a demo at my local Walmart. Did you happen to make it - took place from 1/21-1/25! Once I tried the sample, I knew I wanted to buy a box or two because it was good. We were getting low on the medium roast coffee pods, so I picked up a box of the medium roast.
There were only three varieties of McCafé coffee pods at my local Walmart, but they actually offer eight varieties! So many options to choose from.
Do you dread the mornings? I would highly suggest you trying a delicious cup of coffee and a scrumptious muffin to brighten your mornings! It brightens mine each and every time I think of those breakfast items - mmm..!

- 1 cup buttermilk
- ½ cup oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup granulated sugar
- 3 cups all-purpose flour
- ½ cup dark unsweetened cocoa powder
- ½ teaspoon salt
- 4 teaspoons baking powder

Preheat oven to 375 degrees. Spray a muffin tin with non-stick cooking spray, or you can line with liners.

In a large mixing bowl, combine the buttermilk, oil, and eggs. Mix together using a plastic spatula.

Mix in the sugar and vanilla extract.

Mix in the flour ½ cup at a time until thoroughly mixed together. Fold in the cooca powder, salt, and baking powder.

Pour the batter into the muffin tins ¾ of the way. Bake for 17 minutes and allow the muffins to cool for 2 minutes, then transfer to a cooling rack.
Those few moments while the coffee is brewing and before the chaos of the morning starts is priceless! My local Walmart had a McCafé demo last week too - yum! Love that muffin recipe! #client
