Cilantro Lime Rice Recipe
I don't know the reasoning behind my love of Chipotle's cilantro lime rice. I mean, I could go up to the counter and ask for a bowl of their "white rice" and be perfectly content and satisfied. You too?! It has the perfect balance of zest from the lime juice, with just enough salt to make it beyond amazing, with the perfect amount of cilantro. Mmmmm! Cilantro and I are the best of friends, and I cannot get enough of it! Now we all know what my weakness is! 😉
On a serious note, we should all get the ingredients to make this cilantro lime rice! I love the way Chipotle makes its "white rice," but I'm just going to say my homemade version may be even better than the original. Yup, it is! I love being able to control the amounts of salt, lime juice, and gimme all of the cilantro.
Ingredients for cilantro lime rice:
- long-grain white rice, love basmati rice!
- lime juice
- cilantro
- salt
- butter, everything is better with a dollop of butter!
How to make cilantro lime rice
You will want to start by rinsing your rice and browning it with a little bit of butter. It takes it above and beyond Chipotle's version! Per usual, steam the rice as per the directions on the back of the package. Once the rice is tender, fluff it with a fork and add the lime juice, cilantro, and salt. I told you it was easy! If you want to double the amount, double the ingredients!

Instant pot cilantro lime rice
Start by rinsing your rice and browning it with a little bit of butter on saute mode until the rice has a little color to it. When you are making white rice in your instant pot, you will want to add a 1:1 ratio of water and rice. So for 1 cup of rice, add 1 cup of water. Add the water, chicken stock, or vegetable stock and rice to the instant pot. Lock the lid in place and push "manual" on high pressure for 5 minutes. Allow the pressure to naturally release for 10 minutes and then release any remaining pressure, fluff the rice, add the rest of the ingredients.

- ½ tbsp unsalted butter
- 1 cup long-grain white rice, rinsed
- 2 cups broth, chicken, vegetable, or water
- 3 tbsp lime juice
- ½ cup cilantro, chopped
- ¼ tsp salt, or to taste

In a medium saucepan over medium-high heat add butter. Once the butter has melted, add the rice and continue to stir until the rice has a golden color.

Add the broth and bring to a boil. Stir in rice, cover and reduce heat to low, and cook for 15 minutes, or until rice is cooked through and tender.

Remove the rice from heat, fluff with a fork. Add lime juice, cilantro, and salt. Mix together and serve immediately.
Rinsing the water is a very important step which removes the starch.
Store any leftovers in an airtight container in the refrigerator for up to 4-5 days.
