Ingredients
  • 1 stick unsalted butter softened to room temperature
  • ¾ cup dark brown sugar
  • 1 large egg room temperature
  • 1 and ½ teaspoons vanilla extract

  • ½ teaspoon nutmeg

  • 1 and ½ teaspoons ground cinnamon
  • 3 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking soda

Instructions
  1. In a large bowl, combine the spices (nutmeg, ground cloves, ground cinnamon) with the flour. Using a plastic spatula or a spoon mix the ingredients together, then add in the salt and baking soda. Set aside.
  2. In a stand or a hand-held mixer, cream together the butter and brown sugar. Add in the egg and vanilla extract while mixing on medium-low speed.
  3. Add in the molasses and mix on medium-low speed until all of the wet ingredients are mixed together.
  4. Slowly combine the dry ingredients into the wet ingredients.
  5. Cover the mixing bowl with plastic wrap and chill in the refrigerator for one hour. Overnight is best if you are able to do so.
  6. Preheat oven to 350 degrees and line a cookie sheet with parchment paper or a silicon baking mat.
  7. Add your granulated sugar into a small bowl.
  8. Spoon about 1 tablespoon of cookie dough and roll into balls, then dip into the granulated sugar. Place on the cookie sheet and bake for 8-10 minutes.
