Ingredients
  • 3 lbs chicken breasts diced into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 medium onion diced
  • 28- ounce can crushed tomatoes
  • ½ cup red wine I used Cabernet Sauvignon
  • 2 carrots finely diced
  • 5 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon dried thyme
  • ½ tablespoon dried parsley
Instructions
  1. Cook the diced chicken in a large skillet over medium-heat until cooked through.
  2. Add the olive oil, onion, crushed tomatoes, red wine, carrots, garlic cloves, dried oregano, dried basil, salt, pepper, dried thyme, and dried parsley.
  3. Allow the mixture to simmer over medium-heat for at least 40 minutes.
  4. Serve with pasta, rice or any starch you love. Would be great with zoodles, as well.
