Soft-Baked Chewy Almond Cookies – The perfect cookie with a little crunch factor!

Ingredients
  • ¾ cup unsalted butter softened to room temperature
  • 1 cup light brown sugar lightly packed
  • ½ cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup sea salt almonds chopped
Instructions
  1. Cream together the butter, brown sugar, and granulated sugar in a stand mixer on medium-speed. Mix in the egg and vanilla extract. Slowly add in the flour.
  2. Fold in the cornstarch, salt, baking soda until incorporated into the cookie dough. Gently fold in the chopped almonds.
  3. Cover and refrigerator for at least 3 hours. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicon baking mat.
  4. Spoon cookie dough onto the baking sheet. Bake for 10 minutes or until lightly browned. Allow the cookies to cool, then transfer to a cooling rack.
