Ingredients
  • 1 Smithfield® Marinated Mesquite Pork Loin
  • 2 lbs Yukon Gold potatoes, diced into 1" chunks
  • 2 tbsp oil
  • ½ tbsp salt
  • 1 tsp pepper
  • cup parmesan cheese, shredded
  • 1 tsp dried parsley
Instructions
  1. Prepare your pork loin by following the directions on the back of the package.

  2. Preheat oven to 425 degrees. Grease a large baking sheet. Set aside

  3. Once the pork has finished roasting, prepare your potatoes by adding them to a large bowl. Mix in the oil, salt, pepper, and parmesan cheese.

  4. Add the potatoes to the baking sheet and bake for 25 minutes or until the potatoes are tender and crispy.
