Ingredients
  • ½ cup granulated sugar
  • ½ cup honey
  • ¾ cup unsweetened applesauce
  • 1 large egg
  • ¾ cup sour cream I used fat-free - you can use which ever you have on hand
  • ½ cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ teaspoon salt
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Instructions
  1. Preheat oven to 425 degrees and grease a muffin tin with cooking spray or olive oil.
  2. In a large bowl, combine the granulated sugar and honey. Mix together.
  3. Add in the egg and mix, then add in the sour cream and applesauce and mix everything together thoroughly.
  4. Mix in the all-purpose and whole wheat flour, then add in the salt, cocoa powder,baking soda and baking powder.
  5. Fold in the old-fashioned oatmeal and chocolate chips.
  6. Pour mixture into the muffin tins ¾ of the way and bake for 5 minutes.
  7. Turn down the oven to 375 degrees and bake for 12 minutes.
Recipe Notes

Do not use cupcake liners because they will stick badly. Stores in an airtight container for one week.
