Ingredients
Whoopie Pies
  • ½ cup 1 stick unsalted butter, softened to room temperature
  • ¼ cup granulated sugar
  • ¾ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and ½ cups all-purpose flour
  • 2 tablespoons cocoa powder unsweetened
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 tablespoon red food coloring
Cream Cheese Frosting
  • 8 oz package of cream cheese
  • 3 tablespoons unsalted butter softened to room temperature
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
Instructions
  1. In a stand mixer bowl, cream together the butter and sugars together. Add in the egg and vanilla extract and mix on medium speed.
  2. Slowly add in the flour at ½ cup at a time until thoroughly mixed together.
  3. Add in the cocoa powder, salt, and baking powder. After everything is mixed together, then add in the red food coloring.
  4. Cover with plastic wrap and place in the refrigerator at least an hour.
  5. Preheat oven to 350 degrees and line a cookie sheet with parchment paper or a silicon baking mat.
  6. Using a spoon, spoon out the red velvet cookie dough and roll into a medium ball, then flatten down with your hands.
  7. Bake for 9-10 minutes. Allow the cookies to cool completely.
  8. Prepare the frosting by cream together the cream cheese and butter. Add in the powdered sugar ½ cup at a time and mix on low.
  9. While still mixing on low add in the vanilla extract.
  10. Using a pastry knife or a butter knife, spread the cream cheese frosting on the bottom of one cookie, then place another cookie on top. Repeat until there are no more cookies left.
Recipe Notes

Store in an air tight container in the refrigerator for one week.
