Soft-Baked Reese's Pieces Cookies

Ingredients
  • 12 tablespoons unsalted butter softened to room temperature
  • ¾ cup brown sugar lightly packed
  • ¼ cup granulated sugar
  • 1 large egg + 1 egg yolk room temperature
  • 2 and ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cornstarch
  • ¼ teaspoon salt
  • 1 cup Reese's Pieces
Instructions
  1. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar on medium speed.
  2. While continuing to mix on medium speed, add in the egg and egg yolk.
  3. Turn the speed down to low and add in the flour ½ cup at a time until thoroughly mixed together.
  4. Fold in the baking soda, baking powder, cornstarch, salt, and Reese's Pieces with a plastic spatula.
  5. Cover with plastic wrap and allow to chill in the refrigerator for at least 3 hours. Overnight is best.
  6. Preheat oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking sheet.
  7. Spoon the cookie dough onto the baking sheet and bake for 9-10 minutes.
  8. Allow to cool 1-2 minute before transferring to a cooling rack.

Store in an airtight container or cookie jar for one week.
