Oatmeal Chocolate Chunk Cookies

Ingredients
  • 1 cup 2 sticks unsalted butter, softened to room temperature
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • 2 cups old-fashioned oat
  • 4 ounce semi-sweet chocolate bar chopped*
Instructions
  1. Cream together the butter, brown sugar, and granulated sugar in a large mixing bowl on medium speed until thoroughly creamed together.
  2. Add in the eggs one at a time until they are mixed it.
  3. Bring the mixing speed down to low, add in the vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix together.
  4. /2 cup at a time while mixing on medium speed, add in the flour.
  5. Using a spatula, fold in the oats and and chopped up chocolate bar.
  6. Cover with plastic wrap and refrigerate for at least 3 hours. Overnight is best.**
  7. Preheat oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking sheet.
  8. Spoon the cookie dough onto the sheet and bake for 9-10 minutes.
  9. Allow to cool for 1-2 minutes before transferring to a cooling rack

* I used a Bakers Chocolate Bar.
**You can place the cookie dough into the freezer for 30 mins to chill instead of 3 hours in the refrigerator.
