Easy Chocolate Chip Muffins

  • 1 cup buttermilk
  • ½ cup oil canola or vegetable
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 cup chocolate chips
  1. Preheat oven to 425 degrees. Spray a muffin tin with non-stick cooking spray, or you can line with liners.
  2. In a large mixing bowl, combine the buttermilk, oil, and eggs. Mix together using a plastic spatula.
  3. Add in the sugar and vanilla extract.
  4. Mix in the flour 1/2 cup at a time until thoroughly mixed together. Fold in the baking powder.
  5. Gently fold in the chocolate chips.
  6. Pour the batter into the muffin tins. If you want sky-high round muffins, fill all the way up. If you want smaller ones, fill 3/4 of the way up.
  7. Bake for 5 minutes. Bring down the temperature to 375 degrees and bake for 10-12 minutes. Allow to cool.
