Ingredients
  • 4 garlic cloves miced
  • 1 medium onion diced
  • 2 small or 1 large green pepper diced
  • 1 tablespoon oil
  • ½ to 1 pound of ground beef
  • 1 pumpkin ale or regular ale can also use 1 cup of beef stock
  • 1 cup pumpkin puree not pumpkin pie filling
  • 2 cans 15 ounces each red kidney beans, drained
  • 2 cans diced tomatoes
  • ½ tablespoon pumpkin pie spice mix
  • ½ tablespoon dark chili powder
  • ½ teaspoon cumin
  • salt and pepper to taste
Instructions
  1. Saute the minced garlic, onion, and green pepper in a large pot with oil. Cook until the onions are done. Add in the ground beef and cook until the ground beef is cooked through, about 10 minutes.
  2. Mix in the pumpkin ale or beef stock and allow it to simmer on low-to-medium heat for another 10 minutes. Mix in the pumpkin puree, red kidney beans, diced tomatoes, pumpkin pie spice mix, dark chili powder, and cumin. Allow the chili to look on low-heat for a couple of hours. Can also be done in the slow cooker on low for 8 hours or high for 4 hours.
  3. Serve with cheese, sour cream, or any of your favorite toppings.
