Saute the minced garlic, onion, and green pepper in a large pot with oil. Cook until the onions are done. Add in the ground beef and cook until the ground beef is cooked through, about 10 minutes.

Mix in the pumpkin ale or beef stock and allow it to simmer on low-to-medium heat for another 10 minutes. Mix in the pumpkin puree, red kidney beans, diced tomatoes, pumpkin pie spice mix, dark chili powder, and cumin. Allow the chili to look on low-heat for a couple of hours. Can also be done in the slow cooker on low for 8 hours or high for 4 hours.
