Ingredients
  • 2-3 pounds eye of round roast cooked and shredded
  • 4 garlic cloves minced
  • 1 medium onion diced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 15 ounce can of black beans
  • 2 15 ounce can of kidney beans
  • 2 15 ounce can of diced tomatoes
  • 2 6 ounce can of tomato paste
Instructions
  1. In a large soup pot, combine the garlic, onion, and spices and saute until the onions are cooked through. Mix in the shredded beef, beans, diced tomatoes, and tomato paste and mix everything together.
  2. Cook on low for 2-4 hours, or on medium-heat for 1 hour. Serve with your favorite toppings (cheese, sour cream).
