Ham and Egg Cupcakes for Breakfast

  • 12 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup diced ham
  • ½ cup shredded cheese optional
  1. Preheat oven to 350 degrees, spray a muffin pan with non-stick cooking spray. Set aside.
  2. In a large mixing bowl, whisk together the eggs, salt and pepper. Stir in the diced ham. Pour the mixture into the muffin pan until ¾ full. Add shredded cheese on top (optional). Bake for 25 minutes or until the tops are lightly browned and cooked fully.
