Dark Chocolate Muffins + Quick Pick-Me-Up

  • 1 cup buttermilk
  • ½ cup oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup granulated sugar
  • 3 cups all-purpose flour
  • ½ cup dark unsweetened cocoa powder
  • ½ teaspoon salt
  • 4 teaspoons baking powder
  1. Preheat oven to 375 degrees. Spray a muffin tin with non-stick cooking spray, or you can line with liners.
  2. In a large mixing bowl, combine the buttermilk, oil, and eggs. Mix together using a plastic spatula.
  3. Mix in the sugar and vanilla extract.
  4. Mix in the flour ½ cup at a time until thoroughly mixed together. Fold in the cooca powder, salt, and baking powder.
  5. Pour the batter into the muffin tins ¾ of the way. Bake for 17 minutes and allow the muffins to cool for 2 minutes, then transfer to a cooling rack.
