  • 2 large boneless chicken breasts 1 pound total
  • 1 large egg beaten
  • ½ cup unseasoned breadcrumbs
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 can Hunt's Diced Tomatoes in Rosemary and Oregano
  • ¼ cup parmesan cheese shredded
  • 2 slices of fresh mozzarella thickness will depending on how much cheese you like
  • fresh parsley or basil for garnish
  • Alexia Bread Rolls optional
  • 6 ounces angel hair pasta noodles cooked according to the directions on the back of the package
  1. Preheat oven to 350 degrees. Mix together the breadcrumbs, oregano, basil, salt, and pepper on a medium-sized plate. Coat each chicken breast in the egg, then into the breadcrumbs, Making sure each part of the chicken is coated.
  2. Add ¼ of the diced tomatoes onto the bottom of a 8x8 baking dish, place the chicken breasts on top of the tomatoes. Spread the rest of the diced tomatoes on top of each chicken breasts, add the parmesan cheese on each chicken breast, then place the pieces of fresh mozzarella on top. Bake 30-40 minutes or until the chicken is fully cooked.
  3. Serve the chicken on top of the angel hair noodles, then garnish with basil or parsley.
