White Chocolate Macadamia Nut Cookies – So easy to make and they taste fantastic! Soft-baked and chewy, perfect with a glass of cold milk!

Ingredients
  • 12 tbsp (1.5 sticks) unsalted butter, softened at room temperature
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup white chocolate chips
  • ½ cup macadamia nuts, chopped
Instructions
  1. Cream together the butter, light brown sugar, and granulated speed using a handheld or a stand mixer until fluffy. Mix in the egg until creamy and fluffy.

  2. Slowly mix in the flour, cornstarch, baking soda, and salt until combined.

  3. Fold in the white chocolate chips and macadamia nuts.

  4. Wrap the cookie dough in plastic wrap and refrigerate for 3 hours or up to 72 hours.

  5. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silicon baking mat.

  6. Scoop 1½ - 2 tablespoons of cookie dough onto the sheet and bake for 9-11 minutes.

  7. Allow the cookies to cool for 2 minutes, then transfer to a cooling rack.
