Ingredients
  • 24 oz petite yellow potatoes, quartered
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • ¼ tsp salt
  • tsp pepper
  • ¼ cup shredded parmesan cheese
  • ¼ cup fresh parsley diced
Instructions
  1. Preheat oven to 400 degrees. Spray a large baking sheet with non-stick cooking spray. Set aside.

  2. Place the quartered potatoes, garlic, olive oil, salt, pepper, shredded parmesan cheese, and parsley into a medium mixing bowl and mix everything together.

  3. Spread the seasoned potatoes onto the baking sheet and roasted for 25 minutes turning the potatoes over and baking for another 20 minutes.
