Skinny Blueberry Margarita - Quick and easy made from scratch skinny margaritas. Enjoy it on the rocks or frozen, you choose! Always a winner.
Pulse the blueberries and lime juice in a food processor until pureed. Strain the mixture using a fine mesh sieve and discard the blueberry pulp.
Place the blueberry and lime mixture, simple syrup, reposado tequila, Cointreau, and some ice into a cocktail shaker and shake until combined.
Take a lime wedge and run it along the rim of the glass and dip into salt, add ice and pour the blueberry margarita on top.
Garnish with a lime wedge.
Note 1: For a skinny simple syrup bring 1 cup of water to a boil and mix in 1 cup of Truvia until combined. Allow the syrup to come to room temperature.
