Quick Beef Ginger Stir-Fry

Ingredients
  • Marinade Ingredients:
  • cup soy sauce
  • ½ cup beef broth
  • 3 tablespoons rice wine vinegar
  • 1 inch nob of fresh ginger peeled and minced
  • 2 garlic cloves minced
  • 2 tablespoons cornstarch
  • ¼ teaspoons black pepper
  • Stir-Fry Ingredients:
  • 1 pound sirloin or flank steak cut diagonally across the grain into thin strips
  • 16 ounces frozen stir-fry vegetables
  • 2 tablespoons olive oil
Instructions
  1. Make the Marinade:
  2. Add all ingredients into a ziplock bag and shake to mix everything together, then add in the steak and gentle toss to combine. Cover/seal and refrigerate for at least 30 minutes.
  3. Make the Stir-Fry:
  4. Once the steak has finished marinating, heat the olive oil in a large saute pan over medium-high heat. Remove the steak from the marinade, reserving the marinade, and add to the saute pan. Cook on each side for about a 1 minute or 2, stirring occasionally.
  5. Add in the frozen vegetables and the reserved marinade. Cook for 5-10 minutes.
  6. Serve immediately over rice.
