Ingredients
  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp oil
  • 2 tsp smoked paprika
  • 1 ½ tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp dry mustard
  • ½ tsp onion powder
  • ½ cup bbq sauce
Instructions
  1. Mix your seasoning and spices in a small bowl.

  2. Rub your chicken breasts with the seasoning blend.

  3. With the instant pot on the saute mode, add your oil and allow the pot insert to get hot. Add the chicken breasts and saute on each side for 2 minutes. Next, add the bbq sauce on top of the chicken.

  4. Place the lid on the instant pot making sure the valve is in the sealing position. Press manual (high pressure) and set to 13 minutes. Let the instant pot naturally release pressure for 10 minutes.

  5. Remove the lid on the instant pot and shred the chicken breasts. If you think the sauce has too much liquid, reduce the sauce by pressing the saute mode for 2-3 minutes.

Recipe Notes

How to cook frozen chicken breasts in the instant pot:

  • First rub the frozen chicken breasts with the seasoning blend.
  • Skip the sauteing of the chicken breasts, and follow directions as directed but cook for 25 minutes instead of 13 minutes.
