Low Carb Cauliflower Pizza Bites
Low Carb Cauliflower Pizza Bites are hands-down the best pizza bites! Loaded with fresh vegetables, spices, and seasonings. Your taste buds will be in heaven and will not even notice a difference from traditional pizza. Paleo and Whole 30 compliant!
  • 2 1/2 cups cauliflower florets
  • 1 large egg, slightly whisked
  • 1 1/2cups shredded colby jack cheese
  • 2 tbsp shredded parmesan cheese
  • 1/2tsp pepper
  • 1 tsp salt
  • 1/2tsp garlic powder
  • 3/4tsp dried basil
  • 1/2 cup pizza sauce
  • 1cup shredded colby jack cheese
  • salami, optional
  • sliced black olive, optional
  • parsley or basil, optional (to garnish)
  1. Place the cauliflower florets in a microwave-safe bowl and add 1/3 cup water. Microwave on high for 3 minutes.
  2. Pulse the florets in a food processor until it resembles “rice” consistency
  3. Add the cauliflower rice into a clean hand towel and squeeze the excess water out over a bowl or the sink.
  4. Preheat oven to 425 degrees. Line a large baking sheet with parchment paper. Set aside.
  5. Place the cauliflower rice into a large mixing bowl, add the egg, shredded colby jack cheese, parmesan cheese, pepper, salt, garlic powder, and dried basil and mix until combined.
  6. Place the mixture onto the baking sheet and shape it evenly into a rectangle. Bake for 15-20 minutes without the toppings or until the crust is lightly golden brown.
  7. Spread the pizza sauce on top of the crust, add the colby jack cheese, salami, and black olives. Bake for 5-10 minutes or until the cheese is bubbly and browned. Garnish with parsley or basil.
