Low Carb Cauliflower Pizza Bites are hands-down the best pizza bites! Loaded with fresh vegetables, spices, and seasonings. Your taste buds will be in heaven and will not even notice a difference from traditional pizza. Paleo and Whole 30 compliant!
2 1/2 cupscauliflower florets
1 largeegg, slightly whisked
1 1/2cupsshredded colby jack cheese
2 tbspshredded parmesan cheese
1/2 cup pizza sauce
1cupshredded colby jack cheese
sliced black olive, optional
parsley or basil, optional (to garnish)
Place the cauliflower florets in a microwave-safe bowl and add 1/3 cup water. Microwave on high for 3 minutes.
Pulse the florets in a food processor until it resembles “rice” consistency
Add the cauliflower rice into a clean hand towel and squeeze the excess water out over a bowl or the sink.
Preheat oven to 425 degrees. Line a large baking sheet with parchment paper. Set aside.
Place the cauliflower rice into a large mixing bowl, add the egg, shredded colby jack cheese, parmesan cheese, pepper, salt, garlic powder, and dried basil and mix until combined.
Place the mixture onto the baking sheet and shape it evenly into a rectangle. Bake for 15-20 minutes without the toppings or until the crust is lightly golden brown.
Spread the pizza sauce on top of the crust, add the colby jack cheese, salami, and black olives. Bake for 5-10 minutes or until the cheese is bubbly and browned. Garnish with parsley or basil.
