Mesquite Pork Loin with Parmesan Roasted Potatoes
Serves: 6-8 servings
  • Smithfield® Marinated Mesquite Pork Loin
  • 2 pounds Yukon Gold potatoes, diced into 1" chunks
  • 2 tablespoons oil
  • ½ tablespoon salt
  • 1 teaspoon pepper
  • ⅔ cup parmesan cheese, shredded
  • 1 teaspoon dired parsley
  1. Prepare your pork loin by following the directions on the back of the package.
  2. Preheat oven to 425 degrees. Grease a large baking sheet. Set aside
  3. Once the pork has finished roasting, prepare your potatoes by adding them to a large bowl. Mix in the oil, salt, pepper, and parmesan cheese.
  4. Add the potatoes to the baking sheet and bake for 25 minutes or until the potatoes are tender and crispy.
