Shredded Beef Chili

Ingredients
  • 2-3 pounds eye of round roast, cooked and shredded
  • 4 garlic cloves, minced
  • 1 medium onion, diced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 (15 ounce) can of black beans
  • 2 (15 ounce) can of kidney beans
  • 2 (15 ounce) can of diced tomatoes
  • 2 (6 ounce) can of tomato paste
Instructions
  1. In a large soup pot, combine the garlic, onion, and spices and saute until the onions are cooked through. Mix in the shredded beef, beans, diced tomatoes, and tomato paste and mix everything together.
  2. Cook on low for 2-4 hours, or on medium-heat for 1 hour. Serve with your favorite toppings (cheese, sour cream).
