My Favorite Creamy Pumpkin Alfredo

  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced or grated
  • 1 cup heavy cream
  • 3 tablespoons pumpkin puree (not pumpkin pie filling)
  • ⅓ cup shredded Parmesan cheese
  • pinch of salt, pepper, and pumpkin pie spice
  1. Using a large skillet, add in the butter and minced or grated garlic. Cook on low-to-medium heat until the butter is melted. Whisk in the heavy cream and pumpkin puree. Cook on medium-heat for 10 minutes. Whisk in the Parmesan cheese, salt, pepper, and pumpkin pie spice.
  2. Serve over noodles or "zoodles" .
