Happy New Year!! I’ve had a wonderful break and it was needed for myself, my business, and for my family. It allowed me to catch up on a lot of things I needed to get done and to recharge my creativity. With that being said, here is my first post of 2017 – Easy Healthy Chicken Satay Stir Fry. It’s a mouthful to say, but it’s well-worth it! It’s lighter without sacrificing any of the flavors, and perfect for zucchini noodles or any type of starch!
This dish combines two of my favorite things – stir fries and chicken satay. Mmmmmm! Chicken satay is all about the perfect peanut sauce with thin strips of chicken breasts. It makes me want to make this again for dinner tonight! This dish isn’t completely sugar-free, but it is dairy-free and I wasn’t even trying to make it. It just so happened that I had a can of coconut milk in the back of my cabinet that needed to be used. Love it when you already have most of the ingredients in your pantry or refrigerator!
Another tip to make this dish even easier is to purchase shredded carrots. I know it’s easy to shred carrots, but sometimes we all need a shortcut. Right? My last tip for this Easy Healthy Chicken Satay Stir Fry is to make sure you freeze your chicken breasts for 15 minutes. It makes it a breeze to easily slice thin strips with cutting yourself. I know many times from experience and I wouldn’t want that to ever happen to you, my friend!
If you are truly going for a lighter dish, I recommend using zucchini noodles, cucumber noodles, spaghetti squash, or cauliflower rice instead of rice. This handy spiralizer makes it so easy!
