Wow. What has the summer gone? Just yesterday, it seemed like, I was sitting down with my meal planning notebook jotting down soups for the winter. Now I am thinking about the exact opposite.
I usually try to create a weekly meal plan for our family. It's just the two of us, but we always make enough for 4-6 for leftovers and for lunch the next day. I thought creating a new weekly meal plan for each week would keep us motivated. Us meaning you and me, silly!
So here we go!
Week 1:
Monday (8/10) - Spinach Lasagna Roll-Ups with a side of cheesy garlic bread.
Tuesday (8/11) - Baked Cajun Chicken Breasts on top of a salad with Chipotle Lime Southwest Dressing.
Wednesday (8/12) - Crock Pot BBQ Pulled Pork Sandwiches. My husband will be thanking me for these sandwiches, one of his favorites.
Thursday (8/13) - Mushroom Zucchini Quesadillas. Perfect way to use your garden zucchini!
Friday (8/14) - Mini Meatloaves with Crispy Crushed Smashed Potatoes. Comfort food at it's finest...mmmm!
Saturday (8/15) - Leftovers. Enjoy any dish you may have left over. In our family we will most likely be enjoying the spinach lasagna roll-ups again. We have to enjoy a little dessert every now and then, right? We will be making a batch of Butterfinger Cheesecake Bars.
Sunday (8/16) - Honey, Soy Garlic Chicken with Campfire Potatoes - summer in a meal!
