Ingredients
Stir Fry
  • 2tbsp olive oil
  • 1 1/2pounds chicken breasts,sliced thinly, seasoned with salt and pepper
  • 1 medium onion,sliced thinly
  • 1 yellow pepper,sliced thinly
  • 1 red pepper,sliced thinly
  • 1 1/2cups shredded carrots
  • Sesame seeds(optional, to garnish)
  • green onions(optional, to garnish)
  • 1 tbsp sesame oil
Sauce
  • 5tbsp water
  • 3 garlic cloves,minced
  • 2 tbsp low-sodium soy sauce
  • 2 tsp brown sugar
  • 4 tsp sriracha
  • 2/3cup creamy peanut butter
  • 2/3cup coconut milk
Instructions
  1. Place 1 tbsp olive oil in a large skillet over medium heat. Add the seasoned chicken breasts until cooked through. Remove and set aside.
  2. Place 1 tbsp olive oil in a large skillet over medium heat. Add the seasoned chicken breasts until cooked through. Remove and set aside.
  3. Place the sauce ingredients into a medium pot and allow it to simmer over medium heat for 5 minutes. Remove from heat and allow the sauce to thicken for 10 minutes.
  4. Place 1 tbsp olive oil in a large skillet and saute the onion, yellow pepper, red pepper and shredded carrots until tender.
  5. Place the cooked chicken into the same skillet as the vegetables, add the sauce, and add the sesame oil; toss until combined. Garnish with sesame seeds and sliced green onions. Serve on top of zucchini noodles, cauliflower rice, or rice.
